Chicken Caprese Style Pesto Orzo

A lighter, fresher dinner that still feels comforting. Tender chicken is tossed through creamy pesto orzo with juicy tomatoes and melted mozzarella for that caprese style finish. It’s herby, creamy and perfect when you want something satisfying without feeling too heavy. You can swap to normal pasta if you prefer over orzo and add a drizzle of balsamic glaze for extra caprese flavour.

I did enjoy it but unlikely to make it again tbh. It defo need the balsamic, that was inspired! We also bulked out with broccoli and a slice of garlic bread.
