Notes

The vodka cooks off while simmering, leaving behind flavour rather than alcohol. If you prefer not to cook with alcohol, replace the vodka with 25ml chicken stock or water and ½ tsp lemon juice. The sauce will still be creamy and flavourful. Cream cheese makes the sauce slightly thicker and higher in protein, but cream or crème fraîche will give a more traditional vodka sauce.
