Swaps & Subs
For extra volume, add grated courgette when pan frying the onions and peppers. You can also add some chopped spinach or sweetcorn.
If you prefer less spice, reduce the chipotle paste to 1 tsp.
For extra heat, add chilli flakes or sliced jalapeños before melting the cheese.
You can grill the cheese for a more baked pasta style finish instead of covering with a lid.
Turkey bacon or extra chicken can be used instead of chorizo if preferred
