Beef Doner Kebabs

Full credit to MezeMike for sharing his mum’s method for achieving proper takeaway style doner kebab meat at home. If you’ve seen this technique doing the rounds, it’s easy to see why it went viral. Instead of a rotisserie or dense loaf, the mince is rolled thin, layered, baked, sliced and crisped giving you that classic shaved doner texture, perfect for stuffing into warm pittas with garlic sauce and chilli.

Notes

This recipe works best with slightly higher-fat mince. I’ve tested it with 5% fat mince and while it still works, the result is noticeably drier. If using 5%, it’s essential to roll the mince very thin, thicker sections will dry out more easily. Some supermarkets sell 10% fat mince, which is a great middle ground and gives a juicier result. If using chicken mince, opt for thigh rather than breast. Breast mince can dry out quickly. Once cooked, make sure to toss the sliced doner meat through any juices left in the pan to help keep it moist. When using leaner mince, yoghurt helps bind and emulsify the meat. A thicker yoghurt with some fat works best, though even a small amount of 0% Greek yoghurt will improve texture.

Also I didn’t have the patience at the time to roll this out thin so did it like my previous dinner kebab takeaway I tried and rolled into a fat sausage shape in foil (best way I can describe sorry 🤣) and cooked in the oven before removing foil towards the end. And the sliced it. Absolutely delicious 🤤
