Bang Bang Chicken & Halloumi Rice

This recipe is the perfect dinner to double up on for meal prep. It's super easy to make, less than 540 cals a portion and high on protein. It's got a one pan cooked rice flavoured with sweet chilli and sriracha, tossed with seasoned chicken bites, pepper and onion with golden salty bites of halloumi with that gorgeous bang bang drizzle on top. You can also swap to all halloumi for a veggie version if you prefer.

Notes

You can also add some grated courgette for volume. It's one of my fav things to do for a fussy eater! Add it in when you add the peppers and onions. If you're in a rush you can use Mexican flavoured microwave rice.
