Bang Bang Chicken & Halloumi Rice

This recipe is the perfect dinner to double up on for meal prep. It's super easy to make, less than 540 cals a portion and high on protein. It's got a one pan cooked rice flavoured with sweet chilli and sriracha, tossed with seasoned chicken bites, pepper and onion with golden salty bites of halloumi with that gorgeous bang bang drizzle on top. You can also swap to all halloumi for a veggie version if you prefer.

Turn cooking mode on

Step 1

Season the diced chicken with smoked paprika, garlic granules, salt, and black pepper. Heat a large, deep non-stick pan over a medium to high heat. Add the chicken and cook for 6-8 minutes until lightly golden. Remove from the pan and set aside.

Notes

You can also add some grated courgette for volume. It's one of my fav things to do for a fussy eater! Add it in when you add the peppers and onions.

If you're in a rush you can use Mexican flavoured microwave rice.

Not the prettiest picture but tasted nice. Think I’ll cook the rice for longer next time though, the liquid had absorbed but the rice still felt a bit undercooked. Nonetheless was still tasty! X
