Dinner Plan 53

Happy Friday! I hope you’ve had a good week so far 🤍 This week’s meal plan is leaning fully into fakeaway flavours and proper comfort the kind of dinners that feel indulgent but still fit into real life. On the menu you’ve got sticky Korean BBQ chicken with cheesy rice, a lasagne inspired gnocchi bake, dump and bake hot honey Cajun chicken pasta, BBQ chicken & bacon ranch folded wraps, cheesy chicken tikka loaded garlic and coriander fries, one pan buffalo chicken mac & cheese, and salmon & leeks over mash. As always, everything can be customised to suit you swap proteins, adjust spice levels, or scale portions up or down. I've also made notes on a few to customise for lower calories dependent on your intake. A few of these also store really well, so you can double up and enjoy leftovers the next day to save cooking, especially the bakes and pasta dishes. Hope you love this week’s line up and find a couple of new favourites 💛

The recipes

Sticky Korean BBQ Chicken with Cheesy Rice

This recipe is absolutely banging. It’s got sticky, sweet and spicy Korean style chicken served over cheesy gochujang spiced rice for a bit of added comfort. It’s got loads of flavour but still easy enough for a weeknight dinner.

Lasagne Inspired Gnocchi Bake

This one is proper comfort food. Think all the flavours of a lasagne, but way less faff. Using gnocchi instead of pasta sheets and a white sauce made from garlic herb cream cheese rather than a roux. It’s the kind of dinner that feels indulgent, works brilliantly for batch cooking and always goes down a treat.

Dump & Bake Hot Honey Cajun Chicken Pasta

These are the best kind of dinners when you need something comforting and low faff on a busy weeknight. Creamy and cheesy cajun chicken pasta with a drizzle of hot honey all thrown into one dish that sorts itself out. High in protein, under 560 calories per portion, and leftovers keep brilliantly for the next day

Cheesy Chicken Tikka Loaded Garlic & Coriander Fries

Crispy fries tossed in garlic butter, topped with juicy chicken tikka, melty mozzarella and finished under the grill until golden. It's a proper banging fakeaway perfect for the weekend, although you could easily switch it up to some cubed potatoes for in the week.

One Pan Buffalo Chicken Mac & Cheese

Creamy, cheesy mac & cheese with spicy buffalo chicken on top all made in one pan and absolutely banging (dare I say probably my favourite mac and cheese to date). The sauce is rich but still saucy, with just enough spice from the buffalo to keep things interesting without blowing your head off. It’s proper comfort food, high in protein, and way easier than it looks.
