Chicken thighs or tofu work well here. Any long grain rice can be used, or serve over cauliflower rice for a lower-carb option. Pak choi can be swapped for other quick-cooking greens. Yellow miso works in place of white, and honey can be replaced with maple syrup. Tamari or coconut aminos can be used instead of soy sauce if needed.
