This Slow Cooker Burrito Beef & Rice is one of those proper low faff, easy dinners that stores well if you want to meal prep it! Notes

Turkey mince can be used instead of beef for a slightly leaner option. Kidney beans or pinto beans work well in place of black beans. If you can’t find Mexican style rice, plain microwave rice works too you may just need to add an extra pinch of cumin and smoked paprika when stirring it through. For extra veg, you can also stir through a handful of frozen sweetcorn or diced courgette during the last hour of cooking.
