Pesto Chicken Orzo Salad Pots

This is an easy, summery cold lunch that’s simple to throw together and actually holds up well in the fridge. You’ve got juicy pesto chicken, soft orzo and a creamy dressing that keeps everything from going dry, with a bit of crunch from the veg. Swap to halloumi, or tofu for a veggie version, use red pesto if you're not a fan of green and you can use cubed salmon for a different meat.

Step 1

Start by cooking the orzo in salted boiling water until just tender. Drain and rinse under cold water to stop it cooking further, then leave it to cool fully so it doesn’t wilt the salad.
