Notes

I like to buy the portion Boursin cheese to save on waste Boursin Garlic & Herb Cheese 6 Pack, 96 G - Tesco Groceries you can also use soft reduced fat garlic and herb cream cheese but I don't find it as flavoursome. You can freeze some in cling film prior to stuffing to make it easier. If you accidentally slice through the chicken breast, butterfly the breast and add the cream cheese to the middle, and fold over all of the edges tightly before wrapping in the bacon. This also is delicious with mashed potato! You can pan sear the chicken first if you want crispier bacon and these can be air fried too for a speedier dinner. I would air fry for 20-25 minutes at the same temperature. I always whack my potatoes straight in the airfryer, you can par boil for 5 minutes and allow to steam dry if you prefer.

Really tasty with loads of flavour in the chicken and simple to make with little prep work. Made it on the weekend but could easily make it during the week as well when busy with work as can pop in the oven and get some more work done for 30 mins while it cooks
