Notes

Passata consistency varies between brands. If your sauce looks too thick, gradually add a splash of warm water until it reaches your preferred consistency.

Subs

  • Swap the chicken sausages for pork, turkey or vegetarian sausages if preferred.

  • No baby potatoes? Maris Piper or white potatoes work just as well, simply dice into bite sized pieces before microwaving.

  • Fresh parsley adds the best flavour and colour, but chives or spring onions also work well as a garnish. You could also add some chopped spinach.

Other serve suggestions:
A dollop of garlic yoghurt or a sprinkle of crumbled feta is delicious on top if you want to switch things up.

For an even heartier breakfast, add some toasted sourdough for dipping the eggs.
