Step 1

In a bowl, mix together the Greek yoghurt, tikka curry paste, tomato purée, chopped garlic, ginger purée, lemon juice, salt and black pepper. Add the chicken and stir until evenly coated. If you have time, cover and marinate for at least 30 minutes, or overnight for the best flavour. If not, even 5-10 minutes while you prepare the salad and mint yoghurt will still taste great.
