Lemon Pepper Chicken Creamy Parmesan Pasta

If you’re after something creamy but still fresh enough for spring, this recipe is unreal. Juicy chicken is paired with a silky parmesan sauce and bright lemon flavours for the perfect balance of rich and light. It’s an easy weeknight dinner that doesn’t feel anything but banging. You can bulk it out with extra veggies for volume if you prefer such as peas or chopped spinach or swap the protein for some pan fried salmon.

Notes

You can bake the chicken instead if you prefer, just cook at 200°C (fan) for 18-20 minutes until cooked through. I like to pan fry mine as it gives a bit of colour.
