Notes

Subs
Swap chilli jam for hot honey if you want a sweeter/ spicier finish.

Use light cream cheese instead of the whipped cottage cheese, although the protein will be lower. If your cottage cheese is particularly wet, you may not need all of the yoghurt.

Swap sourdough for a lighter seeded bloomer or your favourite bread.

Add a little feta or Parmesan if you want it slightly more indulgent.

For jammy eggs, 6½-7 minutes should give you set whites with soft, slightly runny yolks. If you prefer firmer yolks, cook them for another minute or two.
