Honey Gochujang Chicken Skewers

Juicy charred chicken thigh skewers marinated in a smoky gochujang and yoghurt marinade, served over rice with a quick pickled salad and a creamy gochujang sauce. The longer you can leave the chicken to marinate the better, but if you only have 5 minutes this can be a super speedy dinner!

Step 1

In a large bowl, combine the Greek yoghurt, gochujang, tomato purée, garlic purée, ginger purée, soy sauce, honey and lime juice. Add the chicken and mix well until evenly coated. Cover and marinate for at least 30 minutes, or overnight if time allows. BUT if you only have 5 minutes, even that will do!

Notes

Chicken breast can be used instead of thighs but may need a slightly shorter cooking time.

Gochujang
For the best flavour, use an authentic Korean gochujang paste (usually found in the world foods aisle or online). Supermarket own brand versions tend to be milder, so you may need to use a little extra to achieve the same level of heat and flavour.
