Notes

I use a bag of frozen sweet potato chunks from Tesco but you can use normal sweet potato. Air frying - you can air fry sweet potato but I would do so at a lower temperature. Sweet potato shrivels alot more than regular potato. You can add veggies in this such as peppers or sweet corn or pack out the mince with black beans. A fresh pico de gallo on top adds another layer of freshness, simply chop red onion, cherry tomatoes and coriander. Mix in a bowl with some fresh lime juice and salt. Swap the cheese sauce for reduced fat cheddar if you prefer.
