I find long grain rice is the best for any type of oven bake. You can also prep this recipe earlier in the day assemble, cover, and refrigerate until ready to bake (add 5 mins extra cook time from cold). You can make this lighter by using a little less cheese, or swapping to reduced fat cheddar.

So easy to make!! I put the pepperoni on top of the cheese and not the other way round.. oops! Didn't make a difference. Very tasty.

Rice was still a bit hard when we took it out, any tips for next time? Would it need more stock or in the oven for longer?

Try adding an extra 50 ml of hot chicken stock before baking or extending the initial covered bake time by an additional 5โ10 minutes. Both methods ought to yield a nice tender result. Enjoy the next batch!

Delicious and easy to make! Especially if you are busy multi-tasking, partner loved it and usually he goes โi donโt want thatโ but cleared his bowl! Also got leftovers for tomorrow to enjoy! Would 100% make again!
