Notes

I find long grain rice is the best for any type of oven bake. You can also prep this recipe earlier in the day assemble, cover, and refrigerate until ready to bake (add 5 mins extra cook time from cold). You can make this lighter by using a little less cheese, or swapping to reduced fat cheddar.

Try adding an extra 50 ml of hot chicken stock before baking or extending the initial covered bake time by an additional 5โ€“10 minutes. Both methods ought to yield a nice tender result. Enjoy the next batch!
