If you struggle to get your cornflakes to adhere, make sure that the cornflakes are crushed enough, I find larger flakes are more difficult when sticking to the breast. Secondly, make sure to shake off excess egg. If the cornflakes get too wet by dripping egg when you transfer to the plate, they will be soggy and won't stick. On that note, make sure to use a dry hand and a wet hand (one used for the egg dipping and one for the cornflakes). Really push the cornflakes in to the breast to adhere, shake off the excess and do it again to really cover the chicken. I don't find these spicy at all, you can increase the chilli to your desired preference of heat.
