Slow cooker results can vary. If your model runs cooler or seals tightly, the curry may retain more liquid. If you are unsure of the power of your slow cooker, start with 300ml coconut milk and add more if needed. To thicken sauces in slow cookers, taking the lid off for the last 30 minutes usually helps to reduce the sauce. Alternatively, you can add a cornflour slurry as listed in the method. Garam masala is a spice that isn't meant to be cooked for a long period of time that's why its popped in at the end. If you cook on the hob, you can just throw it in with everything else if it's easier and if you forget it, it isn't the end of the world.

If you fancy a switch from rice, try it with roasted or mashed sweet potato or root mash. Naan bread or flatbreads are also delicious along with some steamed greens.

I know this is a silly question as it’s a chicken and coconut curry but does it taste strongly of coconut? I’m not a coconut fan at all, but can often cope with it in a curry if it’s a mild flavour.

Hey Lindsey it shouldn't be watery! If you're currently cooking it, try taking off the lid for the last part of cooking or stir through a cornflour slurry (1 tbsp)
