Turn cooking mode on

Step 1

Bring a large pan of salted water to the boil and cook the pasta according to the packet instructions until al dente. Reserve 100-150ml of the pasta water before draining.

Notes

  • Swap the sirloin for rump steak if preferred, but take care not to overcook it as it can become tougher.

  • Add spinach during the final minute of cooking for extra greens.

  • For the best results, remove the steak from the fridge 20-30 minutes before cooking and pat it dry with kitchen paper before seasoning. This helps it cook more evenly and gives a better sear

Swapped the rigatoni for fusilli and didn’t have any chipotle paste, so used a bit more tomato puree and a chipotle hot sauce. Husband said after finishing “you can make that again!”
