The ground coffee adds depth to the chilli but won't make it taste like coffee. A square of dark chocolate can be used instead of coffee.
Swap the kidney beans for black beans if preferred. Adjust the chipotle paste to suit your preferred spice level.
For lower calories/carbs, use smaller potato weight around 250g instead. For a speedier version, use shop bought frozen jacket potatoes.

Perfect, didn't have spring onions and substituted jacket potato for sweet potato instead :)

Can I ask, for meal preps for lunches would you store the potato with the chilli over it or separately in the fridge?

Hey Lisa, I'm so sorry I thought I had replied to this. I'd recommend storing the potato and chilli separately if you can, then heating them together when you're ready to eat. It helps keep the potato nice and fluffy. That said, if you're taking it to work, it's absolutely fine to assemble it all in one container too! ❤️
