  • Stir through chopped sun dried tomatoes or roasted red peppers for extra flavour.

  • Fresh mozzarella can be used instead of grated mozzarella, but make sure to drain it well before using.

  • If you don't have panko breadcrumbs, regular breadcrumbs will also work.

No ovenproof dish? Keep everything in the frying pan if it's oven safe, or simply finish the pasta under a hot grill until the cheese has melted and the topping is golden.
