Strawberry & Peanut Butter Yoghurt Bowl

Turn cooking mode on

Step 1

Place the strawberries for the chia jam into a small microwave safe bowl with the honey (or maple syrup, if using). Microwave for 45-60 seconds until softened. Mash well with a fork, then stir through the chia seeds and lemon juice, if using. Leave to thicken for 5 minutes whilst you prepare the bowl.

Notes

Subs

  • Swap the strawberries for raspberries if preferred.

  • Reduced sugar strawberry jam can be used instead of the homemade chia jam for an even quicker breakfast.

  • Use crunchy peanut butter if you prefer extra texture.

  • Granola is completely optional but adds a lovely crunch.

  • Almond or cashew butter also work well in place of peanut butter.

  • For an extra protein boost, stir 1 scoop of vanilla protein powder into the yoghurt and reduce the yoghurt to 200g
