Cheesy Butter Chicken Potatoes

This was such a banging recipe, perfect for a weekend fakeaway when you want to order in. It's got crispy potatoes loaded with a rich, buttery chicken sauce and melted cheese. Don't be put off by the list of ingredients, most spices you should have in your cupboard if not, they can be replaced with a good curry powder!

Add the diced chicken to a bowl with the salt, black pepper, garam masala, smoked paprika, garlic granules, cumin, and yoghurt. Mix well and set aside to marinate while you prep everything else.

If you don’t have all the spices, a good quality curry powder or tikka seasoning can be used as a shortcut, just adjust to taste.

The kasuri methi (dried fenugreek) is optional but really elevates the flavour and gives it that proper takeaway style finish.

You can swap the cream for a lighter option like half fat crème fraîche.

Mozzarella gives the best melt, but cheddar or a light cheese mix will also work.

Make It Lighter / Add Veg

To make this a bit lighter, you can reduce the cheese slightly or swap for a lighter mozzarella, and use a lower-fat cream or replace some of it with extra yoghurt for a lighter sauce (make sure to stir in off heat).

For a lower calorie option, serve with a slightly smaller portion of potatoes or swap some of them for extra veg on the side.

You could also stir spinach or peas directly into the sauce towards the end for an easy way to add veg without extra prep.
