Step 1

Preheat the oven to 200°C fan / 220°C conventional and line a baking tray with baking paper. Cut the sweet potatoes in half lengthways. Spray lightly with oil and season the cut sides with salt, black pepper and smoked paprika. Place cut side down on the lined baking tray and roast undisturbed for around 1 hour, until completely soft with a lovely caramelised cut side.

Notes

Sweet potatoes: Cooking time will vary depending on their size, particularly in the air fryer. They’re ready when completely soft through the middle with a nicely caramelised cut side.

Honey: This is optional and adds a little extra sweetness and stickiness. If your BBQ sauce is already quite sweet, you can leave it out.

Chicken stock: Allow the sauce to reduce enough to coat the chicken while keeping it slightly saucy. You want some of that sauce to soak into the sweet potato when serving.

Tenderstem broccoli: I served mine with 200g tenderstem broccoli between 2 portions. Spray lightly with oil and season with salt, black pepper and smoked paprika. Roast for 12-14 minutes until tender and starting to char at the edges. You can add it to the oven alongside the sweet potatoes for their final 12-14 minutes.
