Happy Friday 🤍 This week's dinner plan is here and this one has got lots of different flavours from creamy dishes to sweet and spicy fakeaways. On the menu this week: – Slow cooker Thai peanut chicken over noodles (hob version included) – Creamy lemon chicken with parmesan rice – Sticky gochujang loaded baked sweet potatoes (can use cubed potatoes instead and switch to white if preferred) – Bang bang chicken & halloumi rice – Cheesy fajita chicken flatbreads – Salt and pepper chicken loaded chips – Cottage pie loaded crispy potatoes A few of these have meal prep and storage footnotes so you can make extra to save cooking the next day if you prefer. The sauce for this recipe is absolutely incredible, it’s creamy and nutty with a gentle warmth from the red curry paste rather than an overpowering heat. With minimal prep and straightforward ingredients, it’s ideal for busy days when you still want something that tastes like you’ve made an effort. Spoon it over noodles for a satisfying dinner, or swap them for rice if that’s more your thing. There is also a hob version listed below for those without a slow cooker.
