Red Thai Curry Chicken Skewer Bowls

These are one of my favourite summer dinners. Juicy red Thai curry marinated chicken thigh skewers are cooked until lightly charred, then served over fragrant jasmine rice with fresh cucumber and carrot, finished with a creamy coconut red Thai curry sauce. For a lighter version, use chicken breast instead of chicken thigh.

Notes

  • Chicken breast can be used instead of chicken thighs if preferred. Air fry at 200°C for 10-12 minutes, or until cooked through. As breast meat is leaner, take care not to overcook it.

  • If you don't have fish sauce, replace it with an extra splash of light soy sauce.

  • Finish with a sprinkle of roasted peanuts or black sesame seeds for extra crunch

  • The chicken can be marinated up to 24 hours in advance.
