Peri Garlic Bread Chicken Burger with Halloumi & Chilli Jam

This is one of my go to burgers that always hits the spot. Juicy spiced chicken, crispy halloumi, creamy perinaise and a hit of sweet chilli jam all sandwiched in buttery garlic bread. You can swap in boneless chicken thighs for extra juiciness, use ciabatta if you want a bit more crunch, or switch the halloumi for a reduced fat cheese slice.

Start by seasoning the chicken with smoked paprika, peri seasoning, salt and pepper. Brush over the peri marinade if using and leave it to sit while you prepare the rest.
