I used fresh lasagne sheets for this recipe that cook quicker than dried around 10-12 minutes in total. Keeping the lid on helps trap steam so the sheets soften evenly without sticking. Mozzarella is optional for this recipe but adds that cheesy, gooey finish. You can skip it for a lighter version the sauce is still creamy and rich. If the sauce thickens before the pasta is cooked, add a splash of hot water. For a thicker finish, simmer uncovered for the last couple of minutes. Stir through 1 tsp of the sun-dried tomato oil or an extra pinch of chilli flakes for depth and warmth.

If you don't have a lid, you can use a baking tray or some foil to cover the pan. This will help trap the steam and cook the pasta sheets evenly. Hope that helps!
