One Pan Cheesy Chicken Taco Rice

This might just be one of my favourite high volume dinners. Cheesy taco rice loaded with chicken, black beans and sweetcorn, then topped with fresh pico de gallo, avocado and Greek yoghurt for the perfect mix of comfort and freshness. Notes

Subs

  • Microwave Mexican style rice keeps this recipe quick and easy, but plain microwave rice works just as well. You may want to add an extra pinch of taco seasoning for flavour.

  • Black beans can be swapped for kidney beans, pinto beans or mixed beans depending on what you have available.

  • You can swap the sweetcorn for diced peppers or courgette.

  • Freshly made pico de gallo gives the best flavour and adds more volume, but shop bought tomato salsa can be used for a quicker version.

Nutrition

  • To reduce the carbs, use half a pouch of rice between two and add in an additional veggie such as grated courgette, or sub for half cauliflower rice. Alternatively, skip the rice, and serve with salad.

  • To reduce the calories you may want to use slightly less cheddar and omit the avocado.
