Step 1
Start by boiling the potatoes in salted water for around 15 minutes until tender. Drain well, then mash with milk, butter, and a little salt and pepper until smooth. Stir through half the cheese and set aside.
If you have any sides, you could get 4 smaller portions out of this rather than three. Store any leftovers in an airtight container. Once cooled, store in the fridge for up to 3 days. Reheat on full power in the microwave on short blasts until piping hot. Turkey sausages or diced chicken can be used instead of chicken sausages. Sun-dried tomatoes can be swapped for roasted red peppers, and cream cheese can be replaced with crème fraîche or soft cheese. Any baking potato works for the mash, and mozzarella or extra cheddar can be used on top.
