To cut down on cooking time, you could replace the rice with microwavable Mexican flavoured rice or alternatively, use boil in the bag rice. Use lean beef mince for a different protein source.

One of my favourites 💯 I used microwave mexican spicy rice, and added that after I'd cooked it, and just a small bit of the stock.
