Loaded Mexican style hash browns

A brunch worthy of getting out bed for... There's seriously nothing tastier than a crispy hash brown. When I'm in the mood for something a bit fancy and don't feel like having bread, I always go for a loaded hash brown. Add scrambled eggs, smashed avocado, juicy cherry tomatoes, a fried egg, crispy fajita-seasoned chorizo bits, and fresh coriander on top. Delicious!

Notes

To make this higher in protein - add in chicken sausages and reduce the chorizo. Alternatively, opt for scrambled egg whites and one fried egg. Avocado is full of healthy fats but if it isn't your thing or it doesn't suit your macros you can leave it out! If you're feeling spicy throw on some jalapenos Of course, cheese on top of the hash browns is always a good shout.
