Turn cooking mode on

Step 1

Heat a large non stick frying pan over a medium to high heat and lightly spray with oil. Add the salmon pieces to the pan and season with the Cajun seasoning, smoked paprika, salt and black pepper. Cook for 2-3 minutes per side, or until golden and just cooked through.

Notes

Top tip: I find it much easier to mash the avocado with a fork directly on a chopping board rather than chasing it around a small bowl.

Air Fryer: Cook the seasoned salmon at 200°C for 6-8 minutes, or until just cooked through, adding the hot honey glaze for the final 1-2 minutes.

Halloumi works well instead of feta if preferred.

Corn tortillas can be used instead of flour tortillas.

To make your own pickled red onions, simply combine equal parts distilled vinegar and warm water with a pinch of salt, add thinly sliced red onion and leave to pickle for 15–30 minutes.
