Notes

Gochujang paste:
As always, make sure to use authentic gochujang paste found in the world food aisle where possible. Start with less gochujang if you’re unsure, especially in the glaze, then build it up to taste.

Chicken mince tip: slightly damp hands make it much easier to shape the patties without sticking.

Turkey mince works well as a direct swap for chicken.

Add a quick slaw (cabbage, carrot and a little yoghurt or mayo) for extra crunch and freshness
