Step 1

Start by adding the chicken to a bowl. Season with the smoked paprika and peri seasoning, before adding in the lemon juice and peri marinade. Mix well before covering and leaving to marinate for a minimum of one hour.

Notes

I tend to keep a jar of pickled red onions in the fridge as they go with so many foods! If you need a quick batch, at the start of the recipe simply slice a red onion and add to a jar or bowl. Add in 50ml distilled vinegar and fill with 100ml hot water. Give it a stir and continue cooking. These would also make a banging lunch if you had them with some salad or with some rice too.
