You could top with salsa, sour cream or nacho cheese dip To bulk out further, throw in some mixed peppers. Use any flavour tortilla chips if you can't find cheese. If prepping the beef ahead of time, keep in a sealed container ensuring the beef is cold before refrigerating. It will keep for 3-4 days. I like to add a dash of hot water to help loosen the sauce on the hob. Alternatively, you can reheat in the microwave in blasts until piping hot.

Make an easy pico de gallo for added freshness by mixing together a diced red onion, diced salad tomatoes, a few sprigs of coriander chopped, a tbsp lime juice and a pinch of salt. Be sure to make prior to cooking
