Notes

To make this lighter: You can swap the pigs in blankets for crispy bacon bits (just cook some streaky bacon until crispy and finely chop), reduce the cheese to 25g cheddar and 15g mozzarella, and use 10g lighter butter with 50ml milk in the mash. These small changes keep all the flavour and comfort but bring the calories down

Proper comfort food! Such a simple recipe but I wasn’t prepared for how tasty it would be!

I did my chicken in the slow cooker. Absolutely delicious. Unfortunately no pigs in blankets as didn’t arrive on shopping. Would 100% cook again.

Cooking the chicken in the slow cooker sounds like a brilliant twist, Natalie! I'm pleased you enjoyed it. If you ever miss out on pigs in blankets again, swapping in a little fried sausage or bacon could give you a similar flavor burst. xx
