Step 1

If cooking via oven, preheat the oven to 220°C / 200°C fan. Add the sliced potatoes to a large bowl of cold water and rinse well, changing the water if needed, until it runs mostly clear. Drain, then pat the potatoes really dry with kitchen roll or a clean tea towel.

Notes

Potatoes: Slice them as evenly as possible so they cook at the same rate. Rinsing away the excess starch and drying them really well helps them crisp up much better.

Tray size: Use the biggest tray you have and keep the potatoes in as close to a single layer as possible. If they’re overcrowded, they’ll steam rather than crisp.

Caramelised onions: Keep the heat fairly gentle and add small splashes of water as needed. This helps soften and caramelise them without needing lots of oil.
