Slow Cooker Burrito Beef & Rice
This Slow Cooker Burrito Beef & Rice is one of those proper low faff, easy dinners that stores well if you want to meal prep it! Smoky, spiced beef cooks down with peppers, tomatoes and black beans until it’s rich, saucy and full of flavour. Microwave Mexican rice gets stirred through at the end for quickness so it stays fluffy. Finished with melted cheese and then you can throw on any additional toppings you fancy!

This one’s proper comfort food but without a heavy sluggish feeling after and it's all thanks to the brothy rice. Crispy chicken sits on fluffy rice with a light katsu style broth that soaks into everything, so every bite is full of flavour. Simple, warming and absolutely banging.
