Peri Peri Chicken Dump & Bake Spicy Rice

Notes

Troubleshooting:
Rice still a bit firm?
Cover and return to the oven for 5–10 more minutes. Add a small splash of hot water or stock before covering. This usually just means it needed a bit more time or the foil wasn’t sealed tightly enough.

Rice turned out dry?
Stir through a splash of water or stock after cooking. Cover and let it sit for a few minutes to steam. This brings it back nicely.

Rice too wet?
Return to the oven uncovered for 5-10 minutes. Helps evaporate excess liquid.

Top tips
Make sure the dish is tightly covered with foil for the first part of cooking. This is what allows the rice to properly steam and cook evenly.
