You can swap the beef mince for turkey, chicken or quorn mince if preferred just cook the same way.
If you don’t have taco seasoning, use a mix of smoked paprika, cumin, garlic granules, onion powder and a pinch of chilli flakes.
Microwave rice keeps this quick, but you can use cooked basmati or long grain rice if you’ve got it prepped.
You can swap the toppings depending on what you’ve got, sweetcorn, black beans, peppers, jalapeños or cucumber all work well here.
The tortilla chips are extra calories! I use 25g for two people and this was an extra 61 calories each

Keep going back to this it’s just too good. I use dunns river seasoning for the mince which makes it even better !!

So easy, so quick, so tasty! Not a big fan of tomatoes/salsa so left those out and served with a few sweet potatoe tortilla chips on the side, definitely one to make again
