Notes

I used leftover pickled ones, mix red onion in a bowl/jar with equal parts distilled vinegar & warm water with a pinch of salt.

Swap some of the rice for extra lettuce/ or salad to reduce the calories.

You can serve with either nacho cheese or chilli heatwave tortilla chips.
