Dump & Bake Chicken Curry Rice

If you love mild, comforting curry flavours but can’t be bothered with lots of prep or washing up, this bake is for you. It’s inspired by mild asian style curries, made in one dish with simple ingredients and very little hands on time. The rice cooks in the oven alongside the chicken, soaking up all the flavour, making it ideal for feeding the family or meal prepping a few dinners or lunches ahead.

Notes

For best results, use a large, deep baking dish and make sure the foil is sealed tightly so no steam can escape and make sure to use easy cook rice. The rice cooks by steaming, so this step is important. If your rice needs a little longer at the end, simply stir through a small splash of hot water, cover again and return to the oven until tender. Oven temperatures can vary slightly but the rice shouldn't take any longer than an extra 5-10 minutes maximum. Swap carrots for: Frozen peas (stir in after foil removal) Diced pepper or add spinach at the end if you want extra veg If you can't get hold of the Goldfish curry concentrate, mayflower curry sauce is a good substitute.

Sure! You can swap the coconut milk for an equal amount of dairy milk or, for a non-dairy alternative, try almond milk. It will slightly change the flavor and richness but should still be delicious. x
