This was sooo good! I used bacon medallions to keep the calories a bit lower and note to self (although I should have thought of this before), make extra sauce as it disappears too quickly in the potato!

Great to hear you'd made little calucalated switch by using bacon medallions! To bulk up the sauce for next time, adding an extra dollop of Boursin and a splash more milk should do the trick without affecting the flavor goal x

Delicious! Was only making portion of potato for 1 as want to make that fresh and ended up putting the full portion of milk in so that is why the potato looks a little weird! Lovely flavour though!
